Comal is located in the Lower East Side of Manhattan, New York.

Comal celebrates the vibrant spirit of the cuisine in Mexico city. Our menu is built around peak-season produce from the Northeast US, thoughtfully grown and sourced from small farms, alongside sustainably caught seafood and heritage meats.

At the heart of our philosophy is the comal itself: a symbol of warmth, simplicity, and the centre of the kitchen.

Founded by Gaz Herbert, born in Cuernavaca, Mexico, just an hour south of Mexico City, His time there has given him a strong sense of connection to the city’s welcoming hospitality and culinary creativity. Comal is also a culmination of these experiences in Mexico, as well as his exposure cooking in London’s diverse dining scene.

Every dish aims to create a deep sense of flavour, harnessing the fresh and sustainable ingredients that New York City has to offer, and utilising our curated pantry of chiles, spices, and other ingredients from across Mexico.
